    Milk processing

    Our goats are milked twice a day.
    The fresh milk is taken straight to our dairy.

    Some of it gets slowly pasteurised on low heat (63°C instead of 72°C) and remains unhomogenised to preserve all the taste and nutrients.

    The milk is then bottled or transformed into yoghurt and soft cheeses like cream cheese and salad cheese.

    Some of our cheeses are unpasteurised.

    They are formed into tommes and reach different stages of ageing in our cheese cave.
    The process can last from 8 weeks to a year!

    This produces delicious tangy cheeses that are full of character and nutrients.

    The taste and texture of our cheeses vary according to the seasons.

  • Goat milk health benefits

    Goat milk has many health benefits!

    It is easier to digest than cow’s milk and often much better tolerated.

    It contains less lactose and less saturated fats.

    Goat milk is an A2 dairy, which is healthier than A1 dairy that can cause inflammation.

    Goat milk is full of protein, calcium, potassium, and vitamin B12.

    Our gentle pasteurisation preserves all the nutrients and our yoghurt and cheese contain probiotics that are great for digestion and immune health.
